Oatmeal Cookies
| 1 1/4 cups margarine (2 1/2 sticks) |
| 3/4 cup firmly packed light brown sugar |
| 1/2 cup granulated sugar |
| 1 egg |
| 1 teaspoon vanilla extract |
| 1 1/2 cups all-purpose flour |
| 1 teaspoon baking soda |
| 1 teaspoon salt |
| 1 teaspoon cinnamon |
| 1/4 teaspoon nutmeg |
| 3 cups oats |
| 1/2 - 3/4 cup raisins |
- Preheat oven to 375 degrees F.
- In a medium mixing bowl combine flour, baking soda, salt, cinnamon, and nutmeg.
- In a large mixing bowl beat margarine, brown sugar, and granulated sugar until fluffy. Beat in egg and vanilla.
- Add combined dry ingredients to wet ingredients. Mix well.
- Stir in oats. Fold in raisins.
- Drop by heaping tablespoonfuls onto ungreased cookie sheet.
- Bake at 375 degrees F. for 8-9 minutes for a chewy cookie or 10-11 minutes for a crisp cookie. Cool 1 minute on cookie sheet then remove to wire rack and cool completely.
Makes about 4 1/2 dozen cookies
